Typical sweet treats at Christmas include chocolate, Christmas pudding and Christmas cake, but these almond snowballs provide a nice alternative.
Taken from Mary Makes Christmas, Mary Berry’s almond biscuits are soft, fluffy and perfectly formed.
The recipe notes said: “Make these delicious almond biscuits with extract rather than essence.
“Extract comes straight from the nuts, so a genuine flavour is guaranteed.”
The recipe makes 24 biscuits, and they take just 20 minutes to bake in the oven, meaning you can whip up a batch in no time.
Ingredients:
Two free-range egg whites
100g caster sugar
175g ground almonds
One teaspoon of almond extract
55g blanched almonds, chopped
55g icing sugar, sifted
Method:
Line two large baking trays with baking paper before placing the egg whites in a large bowl, whisking until they look like clouds.
Slowly add in the caster sugar, one tablespoon at a time, until the mixture is stiff and glossy.
Gently fold in the ground almonds, almond extract and chopped almonds until well incorporated.
It’s important not to knock any air out of the mixture. Once complete, chill in the fridge for 30 minutes.
Preheat the oven to 180C/160C Fan before placing the icing sugar in a large bowl.
Using wet hands, shape the mixture into 24 balls and coat them in the icing sugar. Place on the baking trays, leaving enough space for them to spread.
Bake the biscuits in the oven for around 20 minutes, until pale golden with a nice hard crust.
Remove from the oven and leave them to cool on a wire rack.
