When you’re craving something light yet indulgent for lunch, you really can’t get much better than a good cheese toastie. Although they taste amazing with just the one filling, there are endless options for what you can add to them to make your sandwich even tastier.
Ham and tomato are popular choices, or a dab of hot sauce if you like it spicy. But the culinary pros at Good Food Everyday have taken the simple cheese toastie to new heights by adding in one fridge item that you might have never considered before. In a recent Instagram post, the experts highly recommended filling your cheese toastie with curry too.
It makes sense – chicken tikka is a hugely popular toastie filling, after all. So if you’ve recently made a curry or had a takeaway and you’ve got leftovers in the fridge, try making it into a delicious toastie that everyone in your house will love.
Chef Samuel Goldsmith shared his delicious chickpea curry recipe with Good Food Everyday, hailing the benefits of keeping any extra portions and piling it into your toastie.
Posting on Instagram, they said: “Is there anything better than a leftovers sandwich? Samuel Goldsmith’s curry toastie is a surprise winner. Make the spiced chickpea sauce to serve with rice for dinner, then pack the leftovers onto your favourite bread with a generous sprinkling of cheese to finish and melt in a pan for lunch the next day.”
You can find the full curry recipe here. But you can use any recipe you like, whether that’s homemade or from your favourite Indian restaurant.
If you find you’ve ordered too much, pop the leftovers in the fridge in a sealed container until you’re ready to make your delicious curry toastie.
To do this, grab two slices of bread and spread some mayo on the outside layer which will create a beautiful crispy golden crust when you fry it up.
Place a frying pan over a medium heat and put in one slice of bread with the mayonnaise side down. Pile on your curry and top with grated cheese of your choice.
Then, top with another slice of bread with mayo on top and fry for a couple of minutes on each side until the cheese is melted and the bread is crispy. Samuel says the mayo gives the toastie an ‘amazing texture and flavour’.
